Tomato sauce with onion & butter

The most disarming sauce in the Italian repertoire: three ingredients, no chopping, and a result that tastes like far more than the sum of its parts. Snap the page and Maple sets it like this.

Ingredients

  • 2 lb fresh ripe tomatoes
  • 5 tbsp butter
  • 1 medium onion, peeled and halved
  • Salt, to taste

Method

Put the tomatoes, butter, and onion in a pot. Add a pinch of salt and set over medium heat.

Simmer uncovered, stirring now and then and crushing the tomatoes against the side, for 45 minutes.

Discard the onion. Taste, adjust the salt, and toss with a pound of pasta.
